Refried Beans with Chorizo

Ingredients

  • 1 large onion, diced
  • 1 clove garlic, pressed or minced, optional
  • 2 or 3 inches of chorizo de frango, diced or quartered lengthwise and sliced
  • 1 jar pinto (manteiga) beans, rinsed and drained

Directions

  1. In large frying pan, fry onion and option garlic.
  2. Add meat and heat up to mix flavors.
  3. Add beans and heat them up with the other ingredients.
  4. Use a potato masher to crush the beans.

I don’t mash all the beans smooth. I just want to the beans to stick together, like lumpy mashed potatoes. You could blend it smooth with a stick blender if you want, although the chunks of meat might thwart a smooth texture.
