Root Mash

We first had root mash from the Allouette/La Riviera French deli. Here’s how we made it in 2020.

Ingredients

4 cups cut-up potatoes (maybe 8 small to medium potatoes)

2 cups cut-up carrots

2 cups cut-up yellow turnip

1 tblsp butter (could be a lot more but we liked the light fresh taste of less)

Salt

scallions, parsley for garnish

Procedure

Boil each vegetable separately because they take different times.

Put cooked vegetables together in a bowl or large pan. Add butter. Mash with masher. Add salt to taste.

Before serving, sprinkle with sliced scallions and chopped parsley.
