You can bake this in a cast iron frying pan, or in a dish set inside your pressure cooker.
Ingredients
- 4 Tbs olive oil
- 2 bell peppers, chopped
- 1 onion, chopped
- up to 1 lb chicken sausage (opt), cut into bite-sized pieces
- 1 head cauliflower, split up into bite-sized pieces
- 2 bell peppers, chopped
- 1 onion, chopped
- 6 large eggs, lightly beaten
- ¼ c. (if any) almond milk, unsweetened (or regular milk)
- 4 oz cheese
Directions
- Saute peppers and onions in the olive oil until onions are soft.
- Add sausage if raw to the saute pan, and saute some more.
- Mix in all the other ingredients.
- Cooking options:
- Bake in cast iron frying pan, 375 deg, 40 minutes, or until eggs are set. If you use too much milk, it will always be watery.
OR - Grease a pan that fits inside your pressure cooker. If you have them, you could use two stacking pans. Put a cup of water in the bottom of the pressure cooker. Put the pans in, on a trivet above the water. Pressure cook on high for 5 or 6 minutes.
