Recipe adapted from https://www.acouplecooks.com/cherry-hazelnut-energy-bars/
Ingredients
¼ cup cocoa
1 cup dried figs, soaked in water (or rum, I suppose)
1 cup hazelnuts, toasted
½ quick oats
½ cup raisins (added because the recipe wasn’t sticking together)
¼ cup almond butter
Directions
In food processor, blend ingredients.
Rather than cut into bars, I grabbed small fistfuls and squeezed to press them together. They looked like Peking ravioli.
I keep the bars in a container in the freezer. For my first batch, all I had was cocoa drink mix with sugar. The texture was enhanced by the sugar crunch, but next time, I’ll make it with unsweetened cocoa. I don’t need it extra sweet.
