Ingredients
1 cup dried figs, soaked in water (or rum, I suppose)
½ cup dried apricots
1 cup cashews
½ cup dried cherries
cashew butter
pumpkin seeds (optionally salted)
Directions
In food processor, blend ingredients. I add them one by one and build up the texture. I add the ingredients that should be more finely mixed first. Add enough cashew butter to get a consistency that will hold together. Reserve the pumpkin seeds for last.
Spread the mixture on waxed paper. Press it into a square, to about ¼ inch thick. Cut into bars. Press pumpkin seeds into the top for tasty decoration. Put the waxed paper on a tray and put it in the freezer. When cold, wrap the individual bars in waxed paper for future good eating.
I keep the bars in a container in the freezer. For my first iteration, I made the bars too thin and cut them too small, so I would eat two or three at a time.
The original recipe online included shredded coconut and chia seeds.
