This recipe has a lot of ingredients, but it is delicious. It has a creamy sauce without any milk. Pam likes it with a lot of the turnip cream sauce. She often forgets to add the french-fried onions because she does not consider it actual food. Recently, though, we found a brand at Whole Foods that didn’t taste like pure lard and was actually tasty.
Ingredients
- 2 lbs green beans
- 1 1/2 medium or 1 large onion
- french fried onions ( French’s)
- 8 oz Applegate uncured low-fat bacon
- 1 medium to large white purple-top turnip
- ½ cup (or enough to blend) Almond Milk (unsweetened)
- 2/3 cup cashews
- 8 oz marinated (or smoked) tofu – Soyboy Carribean flavor was very good
Directions
- Cook bacon and chop into small pieces
- saute onion in bacon pan
- peel, slice, and boil turnip until soft
- blend turnip, ½ to 1 cup cooked onions and almond milk to a creamy texture (about 2 cups)
- par-boil green beans for 3 min; drain & rinse with cold water
- assemble all ingredients in a 10×10″ casserole (covered)
- bake at 350 for 30 min
- top with french-fried onions to taste
