Green Bean Casserole

This recipe has a lot of ingredients, but it is delicious. It has a creamy sauce without any milk. Pam likes it with a lot of the turnip cream sauce. She often forgets to add the french-fried onions because she does not consider it actual food. Recently, though, we found a brand at Whole Foods that didn’t taste like pure lard and was actually tasty.

Ingredients

  • 2 lbs green beans
  • 1 1/2 medium or 1 large onion
  • french fried onions ( French’s)
  • 8 oz Applegate uncured low-fat bacon
  • 1 medium to large white purple-top turnip
  • ½ cup (or enough to blend) Almond Milk (unsweetened)
  • 2/3 cup cashews
  • 8 oz marinated (or smoked) tofu – Soyboy Carribean flavor was very good

Directions

  1. Cook bacon and chop into small pieces
  2. saute onion in bacon pan
  3. peel, slice, and boil turnip until soft
  4. blend turnip, ½ to 1 cup cooked onions and almond milk to a creamy texture (about 2 cups)
  5. par-boil green beans for 3 min; drain & rinse with cold water
  6. assemble all ingredients in a 10×10″ casserole (covered)
  7. bake at 350 for 30 min
  8. top with french-fried onions to taste
